The joke at our dinner table is that I don’t eat enough salad. So, you can imagine the laughs that came when my daughter,16, wanted to know if I had tried kale. It had been 40 years, and one night there she was eating a bowl of raw kale for her main course. Sure, I tried a piece. Not bad. In fact, I had a few more. My daughter is part of the looming resident demographic, so I can relate to the importance that young people place on health and fitness. Village Green recently studied the topic and is now steering their operations toward appealing to that crowd—and with great success. See “How Kale Smoothies Are Affecting Rental Housing.”
