The joke at our dinner table is that I don’t eat enough salad. So, you can imagine the laughs that came when my daughter,16, wanted to know if I had tried kale. It had been 40 years, and one night there she was eating a bowl of raw kale for her main course. Sure, I tried a piece. Not bad. In fact, I had a few more. My daughter is part of the looming resident demographic, so I can relate to the importance that young people place on health and fitness.
